Maple-Glazed Carrots

Ingredients

  • 4 medium carrots (or 1 bag baby carrots)

  • 2 tbsp maple syrup

  • 1 tbsp butter

  • 2 tbsp dried or chopped fresh mint

Preparation

Step 1


Wash or scrape carrots. Slice lengthwise into julienne strips or crosswise into coins. No cutting necessary if using baby carrots.



Step 2


Cook carrots in boiling water for 15 minutes, until tender but firm.



Step 3


Drain liquid and reserve 1/4 cup. Add maple syrup, butter and reserved liquid to carrots. Sprinkle with mint. Stir and cook gently until glazed.
